Biryani Recipe


Ingredients:
Oil 1/2 cup
Beef boti 1/2 kg
Onions 2
Cumin 1 tsp
Cloves 4-5
Black Peppercorn 8-9
Cinnamon stick 1
Star anise 2
Red chili powder 1 tsp
Crushed red chilli 1 tbs or to taste
Nutmeg 1 tsp
Mace 1 tsp
Ginger 1 tbs
Garlic 1 tbs
Tomatoes 5
Green chillies 8-9
Yogurt 2 tbs
Lemon 1/2
Salt 3 tbs or to taste
Fresh Coriander leaves
Fresh mint leaves
Rice sella 250 gm
Water 1 leter (for boiling rice)

Directions:
-In pot add oil and onion, fry until golden brown take out fried onion for later use.
-In oil add beef boti mix well until meat changes color.
-Add water, mix and bring it to Boil cover and cook on low flame until meat is tender (approx 1 hour)
-(If your meat is frozen then direct add water and cover and cook with same process).
-In spice mixer, add Nutmeg, Mace, ginger, garlic, green chillies and grind well.
-Add half fried onion, ginger garlic Nutmeg Mace green chilli paste, tomatoes, red chilli powder, crused red chili, cumin, cloves, cinnamon stick, star anise, mix well and cover for 4-5 minutes.
-Add yogurt and mix well
-Add fresh Coriander, mint leave, green chilies and mix well & set aside.
-In pot add water, cumin, salt and bring it to boil.
-Add rice & let it cook until 3/4 done (approx 8-10 minutes) and strain.
-Now add rice and then layer reserved korma, slice tomatoes, fried onion remaining boiled rice.
-Dissolved food colour in water and add in it.
-cover the lid with an aluminum/towel and steam cook on low flame for 10 - 15 minutes.
-Mix and serve!
